The focus of this experience is chocolate truffle making and a mini chocolate tasting. This is a fun, educational, and hands-on tasting experience. Includes a simple recipe that can be duplicated and adapted at home, with some trouble shooting tips for ganache making.

Guests are required to be in a kitchen for this, and will be responsible for one wet ingredient and basic common kitchen utensils and tools. This information will be available in their kit they can read a day or so before the session.

Kit Includes: Dry ingredients for truffles, informative handout, a tasting set of 5 samples, and flavour wheel keep sake.

Salami Making & Mini Tasting

Chocolate salami is a traditional Italian and Portuguese treat made to look like real salami, but includes chocolate, cookies, nuts and dried fruit.

This kitchen experience also includes a mini tasting while we wait for our treats to "cure" in the fridge.

Guests are required to be in a kitchen for this, and will be responsible for the basic common kitchen utensils and tools. This information will be available in their kit they can read a day or so before the session.

Kit Includes: All ingredits for the salami, informative handout, 5 samples for the tasting, and flavour wheel keepsake.

In my opinion, there is no better companion to fine chocolate than fine tea. This tasting we will enjoy a range of fine chocolate along with two fine looseleaf teas (such as white, green, oolong, pu-erh, fermented, black). These teas are unflavoured, which means the beautiful aromas come from the tea leaves themselves not from other ingredients or extracts added.

The goal of this tasting is to enjoy the chocolates and how they interact with the teas. We will also discuss the underappreciated nuances of unflavoured chocolate and tea and how profound the flavours themselves can be due to processing.

Kit Includes: 6 types of fine chocolate in duplicate (12 samples total), two fine teas (let me know when you book if you have a preference), informative handout, simple preparation instructions, virtual session info. Guests are required to have hot water to prepare tea.

Like coffee, chocolate used to be consumed only as a drink! However, today coffee is seen as more sophistcated than chocolate. This tasting will give equal appreciate to both, and explore the ways in which they interact when enjoyed together.

The coffees are instant, so easy to prepare. They are also decafienated, so can be enjoyed by all. Keep in mind, this is not your average instant or decaf coffee, as the unique origins and roasts offer an excellent range of flavour profiles.

The goal of this tasting is to enjoy the chocolates and how they interact with the different flavour profiles of the coffee. We will also discuss the underappreciated nuances of unflavoured chocolate and tea and how profound the flavours themselves can be due to processing.

We will combine chocolate with relaxation. How? Through a slow-moving relaxing guided session where we will focus on aroma, flavour, body soothing, and relaxing music. A great way for your guests to unwind, take a break, and focus on self-care.

Guests will learn about aspects of chocolate and cocoa that can help sooth and relax the body both physically and mentally. We will consume and use chocolate and cacao to bring these ideas to life.

This tasting will be slow-moving, calm, and quiet with lots of focus on our thoughts and on the music. There will be time for interacting and sharing, but the aim is for each guest to relax and calm their mind.

This tasting is a chocolate making tour from tree to finished product! We will try samples of cacao and chocolate in various forms and stages through the chocolate making process. This is great for those who love to learn about where their food comes from.

We will also cover expensive vs cheap chocolate, cacao ethics and labour issues, and how chocolate making is evolving today.

Chocolate Charcuterie

Fine chocolate is the perfect addition to a charcuterie board. Believe it or not, chocolate was used in savoury dishes far before it becaame synonymous with desserts.

This session will take your guests on a unique culinary exploration of flavours, textures, and unsual pairings and foods. We will explore not only the samples of fine chocolate, but how they interact with beef jerkey, freezedried cheese, and dried fruits and/or vegetables and nuts depending on any preferences.

Kit Includes: 12 samples of fine chocolate (6 types in duplicate), beef jerkey, freezedried cheese, and freezedried fruits/vegetables/nuts depending on preferences. + Craft Chocolate Bars

This can be added to a full-bar kit as an additional bar for the tasting, or to a sampler kit as a nice takeaway. Add as many as you like.

Bars range in price, and can be seen in my online shop. I can choose the best bars and pricing to suit the needs of your guests!

Bars will be selected according to any dietary restrctions (example: no dairy). Not everyone may get the same chocolate bar, and the bar received may not be the same as one of the samples in the kit.

+ Hot Chocolate

This is not your typical hot chocolate. No cocoa powder here. This is real drinking chocolate. Grated up chocolate for the very best hot chocolate you can create.

Guests will be given this as a takeaway, and will be given instructions on how to make the perfect hot chocolate!

+ Hazelnut Chocolate Spread

This is essentially gourmet Nutella, and as good as it gets. Made in Montreal by Allo Simonne. It is made with real hazelnuts, fine chocolate, jaguar nuts (cocoa bean's cousin!), and is dairy-free and vegan. A lovely inclusion and takeaway for your guests.

 

Virtual Tasting FAQs

+ Is Shipping Included?

Yes, the cost of Standard Shipping is included in the cost.

Standard shipping usually requires orders to be placed at least 2 weeks before the event date for small orders, and 3-4 weeks before the event date for larger orders (40-50+).

An extra shipping charge of $10 per kit may be applied for rushed orders or for many kits going to hot destinations that require thermal packaging.


+ How Do I pay?

After you make your booking, you will receive and e-invoice with all the details of your event.

Upon reviewing the invoice, you may pay via a secure payment processor using credit or debit card, Apple Pay, or Google Pay.

I do not accept bank transfers or cheques.

Although you will not receive any hard copy invoice in the mail, I will still require a billing address for the e-invoice. You can include this when you book, or I can collect it from you later if you wish.


+ Are there discounts for larger orders?

Yes, please inquire when you book if placing larger orders.

Generally I can offer discounts for 20, 50, 100 kits and up.

If all or most kits are shipped to one address, let us know and we can see if you are eligible for a discount!

If you don't see something in your budget, feel free to let me know and I can see if I can accommodate your request.


+ Can I change my event date and time?

You certainly may within reason. If your new date/time works with my schedule I'm happy to accommodate it if it works with the logistics of when the kits can arrive. Feel free to ask!

If you are booking now, and not 100% sure on the date or time, that's okay with me! We will work it out.

If for whatever reason there is an issue with shipping or something on your end, the event can be postponed and the chocolate will still be great if kept in a cool place away from heat sources. Contact me right away if this applies to you.


+ Can I gift someone a virtual event?

Unfortunately there is no gifting of the virtual events due to logistics and the freshness of the samples. For gift ideas, please check out gift box sets and DIY tasting kits.


+ Tell me more about the products.

At The Science Of Chocolate I focus on bringing in high quality craft chocolate made with cacao from ethical sources. Although most products are not Fairtrade certified, they actually go above and beyond fairtrade standards!

The chocolate also tastes different than what you and your guests may expect. But this is the point: to push your understanding of chocolate beyond your expectations and perhaps enjoy something new!

The flavoured chocolates may contain dairy, fruits, nuts, seeds, herbs, spices, etc. You have the option to opt out or opt in on ingredients you may not want or want more of!


+ Are the products fair trade? Organic? Vegan?

All products come from cacao that is fairly traded, even if not certified. The focus of The Science Of Chocolate is to highlight makers who use high quality cacao, which is also fairly traded. Many of the products use organic cacao when possible.

Most of the products will be plant-based or vegan. I will include a few dairy based chocolates unless you request not to have any.

I cannot guarantee that all products are nut/dairy/allergen free. Since I don't manufacture all the products, I cannot say one way or the other. Some makers have "may contain traces of" on their bars. Please inquire if you have any concerns. However, I will never guarantee any product is completely nut/dairy/allergen free. You can request not to have products that contain dairy/nuts/etc., but the ones that do not, may contain trace elements of such allergens.


+ I have very specific requests/format/time frames.

It doesn't hurt to ask. Sometimes I get new requests I have not thought of, and they work out great. Sometimes I cannot.

I have a certain way of conducting my tasting, so I can only compromise within reason. However, feel free to ask and I can see what I can do.
