Pure (AKA “single-origin”) chocolate means the flavour comes from the cocoa bean itself, and not from any additional ingredients. Those cherry, nutty, tea notes come from the cocoa bean and the methods used. Think fine wine, coffee, and tea. These bars don’t taste like your typical dark, milk, or white chocolate. The flavours are influenced by genetics, fermentation, and roasting profile.
