A lovely chocolate with mahogany colour and light fruity flavour, and a toasted backdrop. Smoothness is about a 3/5 with some slight detection of cocoa solids.
Levelez sources local cacao in the Tabasco region and crafts chocolate locally in Mexico. They challenge the idea of Mexican origin chocolate being very heavy, earthy, and intense. Their selection of cacao and processing techniques bring forth a new side of cacao origin chocolate.

Maker: Allo Simonne based in Montreal, QC, Canada.
Ingredients: Hazelnuts, Organic Cane Sugar, Jaguar Dark Chocolate (70% theobroma bicolor, Organic Cane Sugar, Cocoa Mass, Organic Cocoa Butter, Vanilla Beans), Cocoa Powder, Vanilla Beans, Sea Salt.
The best chocolate hazelnut spread I’ve ever tasted. Tastes like a creamy milky hazelnut spread, but there is absolutely no dairy, so this product is 100% plant-based. The addition of cacao’s cousin, Jaguar beans (Theobroma bicolor) adds that extra creamy and nutty flavour. If you love gianduja, you will need to sit down while eating this. Spread it on toast, crackers, cookies, add it to your fruit or oatmeal bowl, blend it in a smoothie or even hot chocolate. The possibilities are endless. Impeccable. Puts all other chocolate hazelnut spreads you find at grocery stores to shame.
And if you don’t like it? Well, we likely can’t be friends.

Maker: Cacaoworks based in Calgary, Alberta, Canada.
Cacao is from the Madagascar Sambriano Valley.
Cacaoworks makes their own black garlic from whole Alberta-grown Russian Red organic garlic. Black garlic originated in Korea, and is made by very slowly “cooking” the garlic over weeks at a low heat until the cloves turn soft and black and taste like a balsamic reduction with garlic. It’s sweet, tart, and one-of-a-kind. Cacaoworks takes their black garlic and pairs it with their Madagascar Origin cacao which is also sweet and tart/fruity. It’s a beautiful and unique balance of aromas and ingredients. Goes wonderfully on a charcuterie or cheese board, and pairs very well with a bright fruity red wine.
Ingredients: Cocoa Mass, Cane Sugar, Cocoa Butter, Black Garlic.
Suggested Flavour Notes: Garlic, Balsamic, Sweet, Fruity, Tart.

Chocolate and hazelnut is a childhood favourite of mine. This is more than simply coating hazelnuts in dark chocolate. The hazelnuts are well roasted and candied for an extra crunch. Then they are hand coated with two layers. The first layer is a hazelnut almond gianduja, and the second coat is a 73% Nicaragua-origin dark chocolate. Finally, they are lightly tossed in cocoa powder. Rustic but divine.
Ingredients: Hazelnuts, Sugar, Almond, Milk Powder, Dark Chocolate (Cocoa Beans, Cane Sugar, Cocoa Butter), Coconut Oil, Cocoa Powder.
Contains tree nuts and dairy.

Think outside the chocolate box!
There’s nothing that gets me more excited in the chocolate kitchen than using chocolate in a more savoury way. I first tried cheese and chocolate in truffle form back in 2015 at a shop I worked at as a chocolatier. It was odd, but oddly satisfying. Since then I loved hosting cheese and chocolate pairings.
Hence, here we have a truly savoury dragee. Freeze dried cheddar and smoked gouda coated in a black pepper dark chocolate. Goes well as a snack to your sandwich or with a glass of wine or fresh tomato juice.
Ingredients: Freeze Dried Cheese, Pepper Dark Chocolate (Cocoa Beans, Cane Sugar, Cocoa Butter, Black Pepper), Cocoa Powder.

This book is the accumulation of 4 authors including Michael D. Coe (Author of the True History of Chocolate), Carmen McNeil, Oswaldo Chinchilla Mazariegos, and Luis Luján Muñoz.

Limited Edition Book. 30 pages. Soft Cover. 11”x8” Each page contains a column in English and a column in Spanish.
Young provides an overview of the fascinating natural and human history of one of the world's most intriguing commodities: chocolate. Cultivated for over 1,000 years in Latin America and the starting point for millions of tons of chocolate annually consumed worldwide, cacao beans have been used for beverages, as currency, and for regional trade. After the Spanish brought the delectable secret of the cacao tree back to Europe in the late 16th century, its seeds created and fed an insatiable worldwide appetite for chocolate.
The Chocolate Tree chronicles the natural and cultural history of Theobroma cacao and explores its ecological niche. Tracing cacao's journey out of the rain forest, into pre-Columbian gardens, and then onto plantations adjacent to rain forests, Young describes the production of this essential crop, the environmental price of Europeanized cultivation, and ways that current reclamation efforts for New World rain forests can improve the natural ecology of the cacao tree. Amid encounters with sloths, toucans, butterflies, giant tarantula hawk wasps, and other creatures found in cacao groves, Young identifies a tiny fly that provides a vital link between the chocolate tree and its original rain forest habitat. This discovery leads him to conclude that cacao trees in cultivation today may have lost their original insect pollinators due to the plant's long history of agricultural manipulation. In addition to basic natural history of the cacao tree and the relationship between cacao production systems and the preservation of the rain forest, Young also presents a history of the use of cacao, from the archaeological evidence of Mesoamerica to contemporary evidence of the relationship between chocolate consumption and mental and physical health.
A rich concoction of cultural and natural history, archaeological evidence, botanical research, environmental activism, and lush descriptions of a contemporary adventurer's encounters with tropical wonders, The Chocolate Tree offers an appreciation of the plant and the environment that provide us with this Mayan “food of the gods.”
One of the best books on the history of chocolate. If you are a fan of chocolate and history, or if you wish to have a deeper understanding of chocolate so you can teach others through tastings and classes, this is a must have book. A great deal of history, especially concerning the earlier history of chocolate in Mesoamerica.
Understand the beginnings of chocolate, and how it has evolved into the confection the world loves today. Although this is an incredible book, like all books, it’s not all encompassing. If you want a detailed understanding of the history of chocolate, check out some other resources as well as my academy to learn more.
Grab a hot cup of single origin hot chocolate, sit back, and enjoy a delicious read with The True History Of Chocolate.

Leading neuroscientist Gordon M. Shepherd embarks on a paradigm-shifting trip through the "human brain flavor system," laying the foundations for a new scientific field: neurogastronomy. Challenging the belief that the sense of smell diminished during human evolution, Shepherd argues that this sense, which constitutes the main component of flavor, is far more powerful and essential than previously believed.
Shepherd begins Neurogastronomy with the mechanics of smell, particularly the way it stimulates the nose from the back of the mouth. As we eat, the brain conceptualizes smells as spatial patterns, and from these and the other senses it constructs the perception of flavor. Shepherd then considers the impact of the flavor system on contemporary social, behavioral, and medical issues. He analyzes flavor's engagement with the brain regions that control emotion, food preferences, and cravings, and he even devotes a section to food's role in drug addiction and, building on Marcel Proust's iconic tale of the madeleine, its ability to evoke deep memories.
Shepherd connects his research to trends in nutrition, dieting, and obesity, especially the challenges that many face in eating healthily. He concludes with human perceptions of smell and flavor and their relationship to the neural basis of consciousness. Everyone from casual diners and ardent foodies to wine critics, chefs, scholars, and researchers will delight in Shepherd's fascinating, scientific-gastronomic adventures.

Hazel Lee is a craft chocolate enthusiast and food scientist. You have come across her beautiful tasting posters if you’re connected with the craft bean-to-bar world. She uses this tasting tool in her chocolate tasting workshops where guests paint the colours which express the flavours they experience from their chocolate.
This poster (In English) is a tasting tool which associates colour with words used to describe the flavours found in craft bean-to-bar chocolate. Use this as you would a flavour wheel or flavour tree to help articulate the flavours you experience in your single-origin chocolate bars.

Froth is key to making the perfect hot chocolate or mocha. In fact, some Mesoamericans thousands of years ago thought the froth was the most important part of their drinking chocolate. There are many ways to build froth in your drinks at home, and you can read about some ideas here. The rotating frother is one such tool.
Watch this video where I show you how well this frother works and how to use it.
This nifty device is a manual frother that spins when you push down on the handle. You can use it to beat your hot milk frothy before pouring it over your chocolate and frothing it a few more times. Or, you can add your grated chocolate or hot chocolate mix into the hot milk and press until you have reached the froth desired. It may be beneficial to froth it in a separate tall slender container first, and pour it into your cup. However, if your mug is big enough, you can froth it in the same mug you will drink from.
Stainless steel. No batteries or electricity required. Perfect for camping. Easy and fun to use.
Size: 10” long.

This frother does a great job whipping up your milk and/or hot chocolate. Ideally, place a couple table spoons of your grated drinking chocolate into the mug. Then, pour in your boiled milk and froth it up by moving the frother up and down to incorporate as much air as possible. Froth it for 1-2 minutes for a beautiful texture.
Plastic & stainless steel. Batteries not included (2 x AA)
Size: ~9” long.
The best way to make a hot chocolate is to froth up a good quality grated chocolate with milk or milk substitute. A wonderful easy and effective way to do this is to use the steam wand on your espresso machine. Just be sure, as you always should, to purge your steam wand right after each use. Always refer to your instructions of your espresso machine or frother.
Fill the pitcher to the desired amount of milk
