Feitoria do Cacao from Portugal available at The Science Of Chocolate!
Sue and Tomoko are based in Aveiro, Portugal and have been making bean-to-bar chocolate since 2015! A great deal of care goes into every roast, every recipe, and every bar. Made with ethically sourced cacao.
Each bean-to-bar chocolate maker has their own style, and Feitoria’s style is smooth, delicate, yet interesting with intent. Their matcha is not your typical matcha white chocolate. It has a deeper flavour more reminiscent of Japanese style matcha, mixed with sencha tea leaves for an added level of both texture and intensity. The Pastel De Nata is a fan favourite, and a classic example of Portuguese inspired flavour and culture in a bar.

Ingredients: Cocoa Beans, Cocoa Butter, Cane Sugar, Skim Milk Powder, Whole Milk Powder, Puff Pastry (Wheat Flour, Butter, Water, Salt), Cinnamon, Lemon Oil.
Suggested Flavour Notes: Custard, Cinnamon, Pie Crust.
A lovely take on the famous Pastel De Nata (Portuguese Custard Tarts) in a chocolate bar. The puff pastry are added as an inclusion, and offer a texture and crunch to each bite.

Ingredients: Cocoa Butter, Skim Milk Powder, Azorean Whole Milk Powder, Cane Sugar, Green Tea.
Both the matcha and tokujou-sencha teas are grown on a plantation in Miyazaki, Japan, by the Morimoto’s. The matcha is blended into the white chocolate, and the tokujou-sencha tea leaves are added as an inclusion and left whole for their crunch.
Suggested Flavour Notes: A lovely matcha profile that is not too sweet as other matcha bars. In fact, the bar itself lends a more herbaceous/earthy tea flavour as opposed to a typical sweet matcha chocolate.

Suggested Flavour Notes: A very sharp and strong sheep milk chocolate that is unsweetened (sugar-free). Not for everyone, but rather for the adventurous palate. Works well paired with sharp aged cheeses and more savoury foods such as cured meats.
