Canadian Chocolate Maker, Wallace Chocolate, now in store!
Mark, owner of Wallace Chocolate, has worked in West Africa for years working closely with the cacao farmers there. Today, he has embarked on producing his own line of chocolate made from ethical sources.
This includes cacao from Liberia he direct trades thanks to the relationships he built while living in Africa. Liberia is not an origin you come across often, so worth a try. He produces them in a high percentage dark and a milk chocolate version.

Made with cacao from family owned and operated Kablon Farms in South Cotabato, Davao, Philippines.
Ingredients: Organic Cocoa Beans, Organic Cane Sugar.
Suggested Flavour Notes: Barley Malt, Yogurt Covered Raisin, Cinnamon. Others may suggest bread crust, nutty, leafy greens.

Ingredients: Cocoa Beans, Organic Cane Sugar.
Suggested Flavour Notes: Oak, Dried Mango, Wildflower Honey. Others may suggest more botanical tones of Fresh Green Beans, Rose, and Chicory. Leaves a slight finish similar to a tannic red wine.

The cacao is harvested from wild cacao trees in the forest around the Baures region in Bolivia, near the Reserva Forestal Itenez. These are a rare Beniano cacao (97.3%), which are cured locally to where they are grown.
