Maker Origin: Ruvido is based in Trezzo sull’Adda, Italy just East of Milano. They have a unique and unorthodox method and approach which pushes the boundaries of fine chocolate today.
Made with unfermented Trinitario cacao from Cunducán, Tabasco, Mexico. Cacao has been cultivated here for thousands of years as far back as the Maya civilization. Lavado is a traditional way of preparing cocoa in Mexico that spans millennia. Here, instead of fermenting cocoa beans with the fruit pulp, the pulp is removed or washed away, and the beans are not fermented at all. The flavour of the cocoa bean is quite different, more intense, than if it were fermented.
Normally lavado cacao is intended for drinking chocolate due to how intense and “untamed” it often is, and most would argue it cannot be used for fine chocolate bars. And true, many cacao lavado cannot be. However, like all good artists, Ruvido proves this idea wrong. Zero bitterness and full of beautiful flavour.
Ingredients: Cacao Beans, Raw Cane Sugar.
Suggested Flavour Notes: Walnut. Hazelnut. Other’s suggest Gianduja, Cream, Bread crust.
Texture: Ruvido has a unique approach resulting in a texture that is rough and wild, so don’t expect a traditional silky smooth chocolate. It truly is an experience.
