Pure (AKA unflavoured or “single-origin”) means the flavour comes from the cocoa bean itself, and not from any additional ingredients. Think fine wine, coffee, and tea. These bars don’t taste like your typical dark, milk, or white chocolate. The flavours are influenced by the genetic varietal of the cacao, fermentation, and roasting profile.
