Andrew was a coffee roaster and connoisseur before delving into bean-to-bar chocolate making. With a curiosity to understand the mechanisms behind how to make chocolate, combined with his passion for food, comes forth chocolate with a true unique and creative approach.
Although new on the scene of chocolate makers, he’s already achieved some fabulous bars. The Chanthaburi, Thailand origin is a lovely example of good beans turned into great chocolate with a nice mix of fruity and nutty notes. However, he’s got some fabulous flavoured bars as well such as his house-made black garlic bar, a savoury success. His saskatoon berry pie is a very satisfying flavoured white chocolate. And more bars on the way including his superb whiskey infused, 3 Mexican chili, and some truly unique experimental bars.

The cacao is from Belize and was inoculated with a specific strain of Mycelium (fungi). Fresh cocoa beans are fermented before being dried and roasted. In most cases, they are spontaneously inoculated by the local fungi, yeasts, and bacteria which reduces bitterness and improves flavour. Fresh beans can also be inoculated with specific strains of these various microbes. Various strains (like various strains of wild yeasts in sourdough) change the aroma profile of the cocoa beans.

Cacao is from the Madagascar Sambriano Valley.
Cacaoworks makes their own black garlic from whole Alberta-grown Russian Red organic garlic. Black garlic originated in Korea, and is made by very slowly “cooking” the garlic over weeks at a low heat until the cloves turn soft and black and taste like a balsamic reduction with garlic. It’s sweet, tart, and one-of-a-kind. Cacaoworks takes their black garlic and pairs it with their Madagascar Origin cacao which is also sweet and tart/fruity. It’s a beautiful and unique balance of aromas and ingredients. Goes wonderfully on a charcuterie or cheese board, and pairs very well with a bright fruity red wine.

Suggested Flavour Notes: Garlic, Balsamic, Sweet, Fruity, Tart.

The perfect bar for whiskey lovers. This bar does a great job of capturing the real infused flavour of Whiskey, sweetened with Canadian Maple Sugar . Deep whisky oat and maple flavours are all very prominent yet well balanced.

This is a perfect bar for those who love a little spicy kick in their dark chocolate. Since three different aromatic chilis are used, the flavour is very deep and multi-dimensional unlike many other spicy chocolate bars. As well, the heat is gentle, and slowly warms the mouth without overpowering the flavour of the chocolate.
Champurrado is a traditional Mexican drinking chocolate. In fact, Mexicans essentially only drank chocolate for centuries before the Spanish arrived. This is a very cozy drinking chocolate in a bar. Although there is no milk/dairy, it almost has a dairy-like vibe to it, like a hot cup of milky drinking chocolate.
Ingredients: Cacao Beans, Raw Cane Sugar, Cacao Butter, Cassia Cinnamon, De Arbol Chili, Morita Chili, Chipotle Chili.
