Maria is a bean-to-bar chocolate maker in Mexico. She uses cacao from different regions in Chiapas, Southern Mexico. She does a beautiful job showcasing the range of flavour in single-origin Mexican cacao. But not just Mexican, but specifically Chiapas. It’s amazing how varied the flavour profiles are of her line of dark chocolate bars.
Her bars have a very vibrant flavour profile that is unlike many other bean-to-bar brands you’ve tried. My favourite is the 76% Pichucalco made with Criollo cacao and with deep blackberry, plum, and nutty flavour notes. I also really love her single-origin milk chocolate that is not too sweet, with such a wild flavour unlike many other single-origin milks.

Cacao Origin: Tuzantán, Chiapas, Mexico
Ingredients: Cacao, Cane Sugar.
Suggested Flavour Notes: Caramel and Spice. Others suggest Strawberry Yogurt, Cheesecake.
Bars by Kakoa are lightly roasted with a shorter refining time giving them a more untamed and vibrant flavour and texture.
