Soma was my first non-European fine chocolate, and my first “craft” AKA “bean-to-bar” brand. I came across it while in college nearly 20 years ago now. A classmate of mine wanted to check out this “hip” chocolate shop, and hip was an understatement. My first time seeing a real old-school conche (or any conche), and so my curiosity for this new kind of chocolate began.
With my move from Toronto back to Vancouver, I was out of Soma for a while. But thankfully, Toronto is now back in Vancouver! But if you live in neither, you can still purchase these lovely chocolate bars in the online shop. One of my favourites is the Haiti Milk, and the Ice Wine Lees. Two superb bars that never disappoint. And if you’re one of those people who wants their chocolate silky smooth, the texture of Soma is always on the silkier side. That is except for their Old School Milk, which is a chocolate bar with a crunchy cookie texture.

Made with Amelonado cacao from Pinalum in North Malekula Island, Vanuatu. This region has grown cacao since the 1800’s. Farmers in the region pool their cacao in a central fermenting facility. The name Ramage (Rah-mah-gee) means “we revivded something everyone else had given up, and we made it something great.”
Ingredients: Cacao Nibs, Organic Cane Sugar, Cocoa Butter.
Suggested Flavour Notes: Chocolate Cake, Lemons, Tamarind, Caramel.
